Cairo According to: Chef Mostafa Seif

Ain Shams, Merryland, and Souq Al Goma’a, this is Cairo According to: Chef Mostafa Seif.

Cairo According to: Chef Mostafa Seif

A man who has redefined what Egyptian cuisine can be, Chef Mostafa Seif has gone from running a ‘kebda w sogoa’ street food cart to becoming Executive Chef of Khufu’s, named the number one restaurant on MENA’s 50 Best this year. His trajectory is a Cairene story in its own right, and in this edition of ‘Cairo According to’, he breaks it down for us.

Chef Mostafa looks back at the Cairo he knew as a child and the city he knows today. He takes us through his neighbourhood, Ain Shams, sharing his favourite café and the restaurant whose fried liver and brains still take him back years.

He also goes beyond the places themselves, speaking about the philosophy behind Khufu’s, what Cairo taught him about food, and the way the streets of his childhood seemed to always smell like a home-cooked meal.

What’s a place that means Cairo to you?

Abu Amer’s café in El Zeitoun.

You’ll find a doctor sitting next to a taxi driver, and a retired teacher sitting next to a mechanic who’s just left his workshop. You’ll find university students studying while enjoying a shisha. Everyone is sharing their stories loudly, and no one’s bothered by anyone else. Everyone has their place, and everyone feels among their own people.

Whenever I enter, someone will greet me with “Good morning Chef” even if he’s never met me. Everyone says good morning to each other, even when they don’t know each other, and someone might pay for your tea without even knowing your name - just because you’re sitting next to them.

After a football game, we remain there until dawn, analysing and laughing and fighting. And everyone buys ends up buying a tea for someone else.

That day I understood that Cairo is not buildings or streets. It’s people sitting together.

And that’s the same understanding I try to present in my food: to bring people from different backgrounds around one table.

Complete the following: Cairo is…

A large, busy house. You’ll never find a calm corner inside it, but you’ll also never want to leave it.

What’s your favourite neighbourhood?

Ain Shams.

In Ain Shams people know each other by name. Your neighbour asks about you, the grocer knows what you like, and the café owner knows your order before you even ask for it.

Its streets smell like homecooked meals. When we were young, food for us never meant restaurants; food meant home and family and the people living around us.

My favourite place remains the quarter I grew up in, because it’s the place where I learned that food isn’t just the thing on the plate, but a feeling of belonging and memory and a way to gather people together.

Your go-to food spot?

El Sayed Sharkawy for liver and brains in Ain Shams.

I’ve never forgotten the sandwiches that I used to eat there when I was young. There are some flavours that live with you your whole life, not just because of their taste, but because of the memories you’ve tied to them. This place brings me back to a part of my childhood and the area that I grew up in.

Abo Hamama Sweets, in Al Gamea Square.

Abo Hamama is another special one. These places are part of a food culture that I grew up amidst, where simple flavours and familiar places become a part of your memory and story of Cairo.

Your go-to café or bar?

Abu Amer’s café in El Zeitoun.

Abu Amer for me is more than just a café: it embodies the true soul of Cairo.

You go there because of the people as much as you go for the tea. The faces are familiar, and conversation begins without any introduction. The people there always make you feel like you belong.

This is one of those places that reminds you that the best moments in Cairo don’t need planning. Sometimes all you need is a cup of tea and the right people around you.

Your go-to date spot?

Khufu’s Bistro.

I think Khufu’s Bistro is a special date spot. There’s something exceptional about sharing a meal with someone you love while watching the Pyramids.

It’s a place where Egypt’s history and good food and a calm moment with a special person can come together, and I believe that the most special romantic moments are not tied to grandeur, but to the person who’s sitting in front of you and the memories that you create together.

What isn’t a Cairo landmark but should be?

The Friday Market.

It’s not one of the conventional touristic landmarks, but it says a lot about the real Cairo.

It’s a place filled with people and stories and unexpected discoveries, and it has energy and the details that characterise the city.

Cairo to me isn’t just the Pyramids and the famous landmarks; Cairo is also the places where normal people live and work and interact in. Souq Al Goma’a reveals a side of the city as it is: spontaneous, full of colours and details and surprises, and with a special personality.

And I think that these places deserve attention, because they let people see the real Cairo, far from the usual touristic photos.

Tell us a song that feels like Cairo.

Zahma Ya Donia Zahma – Ahmed Adaweya

As soon as I hear this song, Cairo enters my mind. It carries the busyness of the city, the loudness of its street, the movement that never stops, and the chaos that makes it distinct.

Cairo is constantly moving. The streets are full, and everyone has an errand they’ve got to catch. There’s always something happening around you.

This busyness might exhaust you, but somehow you find yourself loving it. This song for me is like Cairo itself: loud, lively, and impossible to forget.

What's a place in Cairo you wish you could revisit for the first time?

Merryland Park in the 90s.

I wish I could return to Merryland the way I remember it in the 90s, and re-live that experience from the eyes of the child I was then, before life became full of responsibilities and preoccupations.

Sometimes you don’t just miss a place because it was beautiful, but because you miss who you were when you were in it.

For me, Merryland brings me back to a simpler time in my life in Cairo; a time filled with childhood memories that I which to relive once more.

Show us your camera roll.

I’ll choose photos of my life and my memories in Cairo. They are not necessarily professional or touristic photos, but photos that speak to how I see and live the city.

Photos from Ain Shams, and from the places that hold special memories for me, and old personal photos that remind me of the Cairo I grew up in. Because Cairo to me isn’t just the places we visit, but a complete life and unforgettable memories and people.
