One of Latin America's Best Restaurants is Taking Over the North Coast
Inside Arca's temporary Mediterranean home as the acclaimed Tulum restaurant arrives in Egypt until August 2.
Executive Chef José Luis Hinostroza could have kept climbing the world's most predictable culinary ladder. Instead, he stayed in Tulum.
By then, he'd already cooked in some of modern gastronomy's biggest kitchens - Alinea, El Celler de Can Roca and Noma, where he later joined the team behind its celebrated Mexico residency. But rather than treating the Yucatán Peninsula as another stamp on his passport, he built something there. The jungle, the Caribbean coastline, hardwood fire and a network of local fishermen, growers and foragers became the framework for Arca, a restaurant that cooks from where it is rather than what it's expected to be. That approach has earned it the No. 22 spot on Latin America's 50 Best Restaurants 2025 - and the kind of reputation that has people planning entire trips around a reservation.
From July 29 to August 2, that reservation is on Egypt's North Coast.
For one week only, Hinostroza is recreating Arca at WHEN WE EAT at Ramla by Marakez, hosted at Moga, bringing the restaurant's fire-led cooking to the Mediterranean. Think less guest chef, more temporary relocation, as one of Latin America's defining restaurants settles into a different landscape, works with new ingredients and cooks for a new audience.
Arca opens the second season of WHEN WE EAT at Ramla by Marakez, which this summer expands into Egypt's first global restaurant residency programme. Created by Flavor Republic the team behind Cairo Food Week, the series continues with Kinoya from August 11–15 before concluding with Three Bros from August 20–25, turning Moga into a seasonal home for three internationally acclaimed restaurants.
