Ratio's Has Officially Opened in New Cairo's Katameya Heights
Ratios brings sourdough, pastries, savoury breakfast, sandwiches and salads to Katameya Heights’ Pool Terrace in New Cairo.
There are foods for which Cairenes will cross the city, and foods they will merely discuss crossing it for while opening a delivery app. Ratios’ croissants and sourdough have traditionally belonged to the first category. Now the Maadi-born artisan bakery has opened at Katameya Heights’ Pool Terrace, shortening New Cairo’s pastry run.
Ratios began as a husband-and-wife venture on Instagram before acquiring a home in Maadi. Its loaves and croissants are made by hand in small daily batches, with sourdough given the long natural fermentation from which hurried bread is excluded.
At the Pool Terrace, the bakery counter supplies pain suisse, pretzel croissants, cinnamon rolls and brownies - an interpretation of morning nutrition that avoids excessive severity. The breakfast menu is a savoury affair, serving dishes such as beid bel basterma. Crêpes and brioche French toast attend to sweeter appetites, while sandwiches made with sourdough and salads allow the pastry run to become lunch without anybody agreeing to stay.
The move carries Ratios from leafy Maadi to a setting organised around the pool; coffee in the morning, laminated pastry after a swim and a sourdough sandwich when the pastry has somehow failed to constitute a complete afternoon. Katameya Heights changes the scenery, but not the bakery’s small-batch logic. New Cairo no longer has to cross the city for the bread; the bread has crossed Cairo instead.
