From Malaysia to Sahel: Fufu's is Rolling Fresh Noodles From Scratch
Three siblings, handmade noodles and a love for Asian food. Meet the family behind Fufu's in Sahel.
There's no shortage of burgers, pizzas and beach bites in Sahel, but handmade noodles? That's a different story. Enter Fufu's, the family-run noodle bar serving fresh, made-from-scratch noodles and fully customisable bowls from its summer home in Amwaj.
Like most family businesses, Fufu's started with people bringing different strengths to the table. "Having lived in Malaysia for 15 years, and with my sister Farah, loving to cook since she was a kid, especially Asian food, we decided to join forces," Mohamed tells SceneEats. "Me, her and my other sister Merna brought Fufu's to life."
What started as a Ramadan experiment quickly became something the siblings couldn't pack away at the end of the season. "After the very positive feedback we received at our pop-up and the encouragement from both friends and customers, we decided to continue the story in Sahel," Mohamed says.
Whether it was opening in Alexandria or Sahel, the vision never changed. Rather than trying to do everything, the siblings decided to do one thing really well: noodles.
"We wanted to have a very simple and to-the-point menu," says Farah, co-founder and head chef. "We wanted to launch the first noodle bar in Egypt, serving handmade, freshly made noodles with different flavours and cuts."
Before the first bowl was served, the team spent nearly a year fine-tuning every detail, tweaking dough recipes, refining the noodle-making process and testing until every strand met their st(r)andards.
"Our goal is to make the best noodles in Egypt. We want Fufu's to be the place you think of whenever you're craving noodles, no matter what kind you're in the mood for. We're working towards offering a range of fresh noodles, each with its own texture, thickness and bite, and getting every single one exactly right," Farah says.
Fufu's may be spending the summer in Sahel, but the North Coast isn't the end of the story. The team is already working on bringing the concept back to both Alexandria and Cairo once the season wraps up.
