Saudi Food Composition Tables Document Traditional Dishes

A new national reference documenting the nutritional composition of traditional Saudi dishes has been released by the Saudi Food and Drug Authority through the National Nutrition Committee.

The 'Saudi Food Composition Tables' form part of the Saudi Food Composition Database initiative under the Health Sector Transformation Program and Saudi Vision 2030. The publication is intended to support evidence-based health policies, dietary guidelines, nutrition research and public awareness while documenting the Kingdom's culinary heritage.

The project analysed 130 traditional Saudi dishes using a standardised scientific methodology. Each recipe was prepared three times, with at least 12 food samples collected per dish before laboratory testing measured 49 macro and micronutrients, generating more than 19,000 individual laboratory analyses. The resulting data was then reviewed to ensure accuracy and consistency.

According to the authority, the publication enables consumers and researchers to better understand the nutritional value of traditional Saudi recipes when prepared using standard methods and quantities, while also supporting the integration of local dishes into balanced diets.

The National Nutrition Committee comprises representatives from government entities, nutrition specialists, consultants and private sector experts. The full 'Saudi Food Composition Tables' is available digitally through the Saudi Food and Drug Authority's website.
