Riva Brings Its Wood-Fired Pizza Game Back to Cairo’s First Nile Boat

There are certain smells that make it physically impossible to keep walking. Fresh bread. Garlic hitting hot butter. And, somewhere very near the top of that list, pizza dough blistering inside a 485°C wood-fired oven. Add the Nile to the equation and you’ve got yourself open-air Italian pizzeria Riva, which is reopening at Four Seasons Hotel Cairo at The First Residence's First Nile Boat on October 1st with a completely new menu and one particularly dangerous addition to any peaceful evening by the water: the ability to sit there and watch your actual pizza being stretched, topped and shoved straight into the flames in front of you.

Now, what hasn’t changed is Riva’s fairly straightforward Italian philosophy: fresh ingredients, good food, and getting everyone around the table long enough for someone to inevitably reach across it and steal something off your plate. And if they time that theft with the antipasti, they might get their hands on a Caprese with buffalo mozzarella, vine-ripened tomatoes and aged balsamic reduction, or a Rucola Salad where peppery rocket meets mushrooms, cherry tomatoes and balsamic dressing.

Once you get to the pizzas, restraint becomes considerably harder, and your slices will find their way into your friend’s hand before you’ve even caught the first whiff. The Margherita keeps things classic, while the Piccante turns up the heat with spicy salami and oregano, and the Quattro Formaggi takes the concept of “a little cheese” and throws it politely out the window, combining buffalo mozzarella, Scamorza, Grana Padano and blue cheese.

For something meatier, Pollo Berbecue brings grilled chicken, red onion and jalapeño together with smoky barbecue sauce, all sitting over tomato sauce and buffalo mozzarella. AI Pesto goes greener with homemade basil pesto, buffalo mozzarella, sun-dried tomatoes, fresh basil and Parmesan. And then there’s the Riva itself, piling smoked Scamorza, mushrooms, Italian salami and smoked turkey onto one very busy pie that practically invites a hostile takeover.

By this point, whatever remained of your self-control has probably left the table, but the dolci are still coming.

The Panna Cotta keeps things creamy and cool with sweetened cream, vanilla and fruit compote, while the tiramisu layers espresso-soaked savoiardi biscuits with velvety mascarpone before giving the whole thing a generous dusting of rich cocoa. But the real test of whether your stomach has any integrity left is the Nutella Calzone: warm baked pizza dough filled with Nutella and lightly dusted with powdered sugar. You said you were full. Your friend’s calzone would like a word.

So, come October, should you find yourself in the mood for something hot, cheesy and Nile-side, follow the smell of wood-fired dough to Riva, grab a table outside, roll up your sleeves, and prepare to defend your dinner.
